1 cup marinara sauce
1 cup shredded mozzarella cheese

Instructions
Step 1: Prepare the Zucchini
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice zucchini into ½-inch rounds and pat dry. Sprinkle with salt and let sit for 10 minutes to remove excess moisture. Pat dry again.
Step 2: Bread the Zucchini
- Set up three bowls:
- Bowl 1: Flour, salt, and black pepper.
- Bowl 2: Beaten eggs.
- Bowl 3: Breadcrumbs, Parmesan, Italian seasoning, garlic powder, and red pepper flakes.
- Dip each zucchini round into the flour, then the egg, and finally coat in the breadcrumb mixture.
Step 3: Bake Until Crispy
- Arrange zucchini rounds in a single layer on the baking sheet.
- Lightly spray with cooking spray or drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
Step 4: Add Sauce & Cheese
- Remove from oven and spoon marinara sauce over each round.
- Sprinkle with mozzarella and Parmesan cheese.
Step 5: Melt & Serve
- Return to the oven and bake for 5 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil and serve warm!
