Description

This Zucchini Parmesan is a lighter, veggie-packed twist on Chicken Parmesan! Featuring crispy baked zucchini rounds topped with marinara sauce and melted mozzarella, it’s a simple yet flavorful dish that’s perfect for any meal.


Ingredients

For the Zucchini:

2 large zucchini, sliced into 1/2-inch rounds

1 tsp salt

1/2 tsp black pepper

1/2 cup (60g) all-purpose flour (or almond flour for low-carb)

2 large eggs, beaten

3/4 cup (90g) breadcrumbs (panko or Italian-style)

1/2 cup (50g) grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp red pepper flakes (optional, for heat)

For Topping:

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tbsp chopped fresh basil


Instructions

Step 1: Prepare the Zucchini

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice zucchini into ½-inch rounds and pat dry. Sprinkle with salt and let sit for 10 minutes to remove excess moisture. Pat dry again.

Step 2: Bread the Zucchini

  1. Set up three bowls:
    • Bowl 1: Flour, salt, and black pepper.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Breadcrumbs, Parmesan, Italian seasoning, garlic powder, and red pepper flakes.
  2. Dip each zucchini round into the flour, then the egg, and finally coat in the breadcrumb mixture.

Step 3: Bake Until Crispy

  1. Arrange zucchini rounds in a single layer on the baking sheet.
  2. Lightly spray with cooking spray or drizzle with olive oil.
  3. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.

Step 4: Add Sauce & Cheese

  1. Remove from oven and spoon marinara sauce over each round.
  2. Sprinkle with mozzarella and Parmesan cheese.

Step 5: Melt & Serve

  1. Return to the oven and bake for 5 minutes, or until cheese is melted and bubbly.
  2. Garnish with fresh basil and serve warm!

Notes

  • Air Fryer Method: Cook at 375°F (190°C) for 10-12 minutes, flipping halfway.
  • Make It Low-Carb: Use almond flour and crushed pork rinds instead of breadcrumbs.
  • Storage: Refrigerate leftovers for up to 3 days. Reheat in the oven at 375°F for 5-7 minutes.
  • Serving Ideas: Serve over pasta, zucchini noodles, or with a side of garlic bread.
