- 1 cup Brussels sprouts, thinly sliced (optional)
- 1 cup pomegranate seeds (or dried cranberries)
- 1 apple or pear, thinly sliced
- 1/2 cup roasted pecans (or walnuts)
- 1/3 cup crumbled feta or goat cheese (optional)
- 1/2 cup citrus segments (orange, blood orange, or grapefruit)
For the Homemade Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar (or apple cider vinegar)
- 1 tablespoon maple syrup (or honey)
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Make the Vinaigrette:
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, garlic, salt, and pepper until well combined.
Assemble the Salad:
- In a large bowl, toss the greens and Brussels sprouts.
- Add the sliced apple/pear, pomegranate seeds, citrus segments, and nuts.
- Sprinkle with feta or goat cheese, if using.
Dress & Serve:
- Drizzle the vinaigrette over the salad just before serving. Toss gently to coat.
