Description

A hearty and refreshing salad featuring winter greens, juicy citrus, crunchy nuts, and a zesty vinaigrette. Perfect for a healthy meal or side dish!


Ingredients

For the Salad:

  • 6 cups mixed greens (spinach, kale, or arugula)
  • 1 cup Brussels sprouts, thinly sliced (optional)
  • 1 cup pomegranate seeds (or dried cranberries)
  • 1 apple or pear, thinly sliced
  • 1/2 cup roasted pecans (or walnuts)
  • 1/3 cup crumbled feta or goat cheese (optional)
  • 1/2 cup citrus segments (orange, blood orange, or grapefruit)

For the Homemade Vinaigrette:

 

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar (or apple cider vinegar)
  • 1 tablespoon maple syrup (or honey)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Make the Vinaigrette:

  1. In a small bowl or jar, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, garlic, salt, and pepper until well combined.

Assemble the Salad:

  1. In a large bowl, toss the greens and Brussels sprouts.
  2. Add the sliced apple/pear, pomegranate seeds, citrus segments, and nuts.
  3. Sprinkle with feta or goat cheese, if using.

Dress & Serve:

 

  1. Drizzle the vinaigrette over the salad just before serving. Toss gently to coat.
  2. Serve immediately and enjoy!

Notes

  • Swap pecans for almonds or sunflower seeds for a nut-free option.
  • Add grilled chicken or roasted chickpeas for extra protein.

 

  • Store vinaigrette in the fridge for up to a week.
