Description
This creamy, garlicky white sauce is the perfect base for homemade pizza! It’s rich, flavorful, and pairs perfectly with chicken, veggies, or just cheese.
Ingredients
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 3/4 cup (180ml) whole milk (or half-and-half for extra richness)
- 1/4 cup (60ml) heavy cream (or more milk)
- 1/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano (optional)
- 1/4 teaspoon crushed red pepper flakes (optional, for a spicy kick)
- 1/2 cup (50g) grated Parmesan cheese

Melt the Butter & Cook Garlic – In a small saucepan over medium heat, melt butter. Add minced garlic and sauté for 30-60 seconds until fragrant.

Make the Roux – Stir in flour and whisk continuously for 1 minute to cook out the raw flour taste.

Add Milk & Seasonings – Slowly whisk in milk and cream, stirring constantly until smooth. Add salt, pepper, oregano, and red pepper flakes.

Thicken & Add Cheese – Simmer for 2-3 minutes until the sauce thickens slightly. Remove from heat and stir in Parmesan cheese until melted.

Cool & Use! Spread over pizza dough, or store in an airtight container in the fridge for up to 5 days.
Notes
✔ Make it lighter: Use all milk instead of cream.
✔ Dairy-Free Option: Swap butter for olive oil and use unsweetened almond milk + dairy-free Parmesan.
✔ Extra Flavor: Stir in fresh basil or a squeeze of lemon juice before serving.
