Description

White Chocolate Strawberry Truffles are a decadent, bite-sized treat that combines creamy white chocolate with the sweet and tangy flavor of strawberries. These truffles have a rich, melt-in-your-mouth texture, making them perfect for special occasions, gifting, or simply indulging in a sweet craving.


Ingredients

  • 8 oz (225g) white chocolate, finely chopped
  • 1/4 cup (60ml) heavy cream
  • 1/2 cup (10g) freeze-dried strawberries, finely ground
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter, softened
  • Pinch of salt
  • 1/2 cup (60g) powdered sugar or extra ground freeze-dried strawberries for coating

Instructions

  • Prepare the Strawberry Powder: Grind the freeze-dried strawberries into a fine powder using a food processor or a spice grinder. Set aside.
  • Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat.
  • Melt the White Chocolate: Pour the hot cream over the chopped white chocolate. Let it sit for 1-2 minutes, then stir until smooth.
  • Add Flavors: Stir in the vanilla extract, butter, salt, and the ground freeze-dried strawberries. Mix well until fully combined.
  • Chill the Mixture: Cover and refrigerate the mixture for at least 2 hours, or until firm enough to scoop.
  • Shape the Truffles: Using a small cookie scoop or spoon, scoop out small portions and roll them into balls with your hands.
  • Coat the Truffles: Roll the truffles in powdered sugar or additional strawberry powder for an extra burst of flavor.
  • Set & Serve: Place the coated truffles on a parchment-lined tray and refrigerate for another 30 minutes before serving.

  • Store in an airtight container in the refrigerator for up to 1 week.
  • For a smoother texture, strain the strawberry powder before mixing it into the truffle mixture.
