These homemade vanilla ice cream sandwiches are a delicious treat! Made with soft, chewy chocolate cookies and creamy vanilla ice cream, they’re perfect for summer or any time you crave a classic dessert.

For the Chocolate Cookie Layers:
- 1 cup (125g) all-purpose flour
- 1/2 cup (50g) unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) milk
For the Ice Cream Filling:
- 1 quart (4 cups / 946ml) vanilla ice cream, softened
Instructions
- Preheat Oven & Prepare Pan – Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients – In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Make Cookie Dough – In a separate bowl, beat butter and sugar until fluffy. Add the egg and vanilla, mixing until combined. Gradually add the dry ingredients, alternating with milk, until a smooth dough forms.
- Shape & Bake – Roll out the dough to about ¼-inch thickness. Cut into 16 equal rectangles (or use a cookie cutter for fun shapes). Place on the baking sheet and prick holes with a fork for the classic look. Bake for 8-10 minutes, then cool completely.
- Assemble Sandwiches – Spread softened vanilla ice cream onto one cookie and top with another. Press gently. Repeat with the remaining cookies.
- Freeze & Serve – Wrap each sandwich in parchment paper and freeze for at least 2 hours before serving.
Notes
- For extra fun, roll the edges in sprinkles, mini chocolate chips, or crushed nuts.
- Use different flavored ice creams for variety!
- Store in an airtight container in the freezer for up to 2 weeks.
