Description

Valentine’s Day Cake Mix Cookies are a delightful and easy treat to share with your loved ones. These soft, chewy cookies are made using a boxed cake mix, making them both convenient and delicious. With a festive pink hue and sweet white chocolate chips, they’re perfect for celebrating the occasion.

Ingredients

Units Scale
  • 1 box (15.25 ounces) strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup white chocolate chips
  • Valentine’s-themed sprinkles (optional)

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Mix the Dough: In a large bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until well blended. The dough will be thick.
  • Add Mix-ins: Fold in the white chocolate chips and sprinkles, if using, until evenly distributed throughout the dough.
  • Scoop and Bake: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake: Bake in the preheated oven for 9-11 minutes, or until the edges are set and the tops are just beginning to crack. Avoid overbaking to keep the cookies soft.
  • Cool: Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.

Notes

  • Variations: For a different flavor, try using a red velvet or chocolate cake mix. You can also substitute the white chocolate chips with milk or dark chocolate chips.
  • Storage: Store the cooled cookies in an airtight container at room temperature for up to one week.
  • Freezing: These cookies freeze well. Place them in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag or container. Thaw at room temperature before serving.
