- Shortbread Cookies:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour

- Caramel Layer:
- 1 cup soft caramel candies, unwrapped
- 2 tablespoons heavy cream
- Chocolate Topping:
- 1 1/2 cups milk chocolate chips
- 1 teaspoon vegetable oil
Instructions
- Make the Shortbread: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, beat butter and powdered sugar until light and fluffy. Mix in vanilla.
- Gradually add flour and salt, mixing until a dough forms.
- Roll dough to ¼-inch thickness and cut into circles. Place on baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden. Cool completely.
- Prepare Caramel Layer: Melt caramel candies with heavy cream in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Spread caramel over each cookie and let it set.
- Make Chocolate Topping: Melt chocolate chips with oil in the microwave in 30-second intervals, stirring until smooth.
- Spoon or drizzle chocolate over the caramel layer. Let set before serving.
