Description

These Twice Baked Potato Bites are the perfect bite-sized version of a classic comfort food! Creamy mashed potatoes, bacon, and cheese are stuffed inside crispy potato skins for a fun, flavorful appetizer or side dish. Perfect for parties, gatherings, or even a weeknight treat!


Ingredients

  • 6 small baby potatoes (or 4 medium-sized potatoes)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped green onions (optional)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika (optional, for garnish)

Instructions

  • Step 1: Prepare the Potatoes
  • Preheat the oven to 400°F (200°C).
  • Wash the baby potatoes and pat them dry. Rub each potato with olive oil, and sprinkle with salt and pepper.
  • Place the potatoes on a baking sheet and bake for about 25–30 minutes, or until tender when pierced with a fork.
  • Let the potatoes cool slightly until you can handle them.
  • Step 2: Make the Potato Filling
  • Cut each potato in half and scoop out the flesh, leaving about a 1/4-inch border of potato around the edges.
  • Place the scooped-out potato flesh in a bowl and mash it with a fork or potato masher.
  • Add the sour cream, cheddar cheese, bacon, butter, garlic powder, and onion powder to the mashed potatoes. Stir until everything is well combined and creamy. Taste and adjust seasoning if needed.
  • Step 3: Stuff the Potato Skins
  • Spoon the mashed potato mixture into the hollowed-out potato skins.
  • Place the stuffed potato bites back on the baking sheet.
  • Step 4: Bake and Serve
  • Bake the stuffed potato bites in the oven for another 10-15 minutes, or until the cheese is melted and the tops are lightly golden.
  • Remove from the oven and garnish with green onions and a sprinkle of paprika if desired.
  • Step 5: Serve & Enjoy
  • Serve warm as an appetizer or side dish. Enjoy!

Notes

  • Make Ahead: You can prepare the stuffed potatoes ahead of time and refrigerate them until ready to bake. Simply bake them for about 15-20 minutes when you’re ready to serve.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
  • Variations:
