Description

These Turkey, Cranberry, Brie and Pear Sandwiches with Avocado and Bacon are the ultimate combo of savory, sweet, creamy, and crunchy. Made with leftover turkey (or deli slices), crisp pears, creamy brie, smoky bacon, and a swipe of tangy cranberry sauce, it’s a gourmet sandwich that’s perfect for lunch, brunch, or even a casual dinner.


Ingredients

  • 8 slices of thick sandwich bread (sourdough, multigrain, or brioche work great)

  • 8 oz cooked turkey breast (sliced or shredded)

  • 4 oz brie cheese (sliced)

  • 1 ripe pear (thinly sliced)

  • 1 avocado (sliced or mashed)

  • 4 tablespoons cranberry sauce (homemade or store-bought)

  • 6 slices cooked bacon

  • 2 tablespoons butter (for grilling)

  • Salt and pepper, to taste

 

  • Optional: arugula or baby spinach for some greens


Instructions

  1. Spread cranberry sauce on one side of 4 slices of bread.

  2. On the other 4 slices, layer with sliced avocado (or mash and spread), and season lightly with salt and pepper.

  3. Add turkey slices on top of the cranberry side.

  4. Layer with pear slices, bacon, and brie cheese.

  5. Top with the avocado side of the bread to form sandwiches.

  6. Heat a skillet or griddle over medium heat and melt the butter.

  7. Grill sandwiches for about 3–4 minutes per side, pressing down slightly, until the bread is golden and the brie is melted.

  8. Slice in half and serve warm.


Notes

  • Great way to use Thanksgiving leftovers!

  • Swap brie for goat cheese or sharp white cheddar if desired.

  • Add greens like arugula or spinach for extra crunch and freshness.

  • For a cold version, skip grilling—just assemble and enjoy!
