For the Cake:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
For the Tres Leches Mixture:
- 1 (12 oz) can evaporated milk
- 1 (14 oz) can sweetened condensed milk
- 3/4 cup whole milk (or heavy cream)
For the Whipped Topping:
- 1 1/2 cups heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For Garnish (Optional):
- Ground cinnamon
- Fresh strawberries or berries
Instructions
Bake the Cake
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat egg yolks with ½ cup of sugar until pale and fluffy (about 2 minutes). Stir in milk and vanilla extract.
- In another bowl, beat egg whites until soft peaks form. Gradually add the remaining ½ cup of sugar and beat until stiff peaks form.
- Gently fold the egg whites into the yolk mixture. Then, fold in the flour mixture in batches until just combined.
- Pour the batter into the prepared baking dish and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 15 minutes.
2. Soak the Cake
- In a bowl, whisk together evaporated milk, sweetened condensed milk, and whole milk.
- Poke holes all over the cake using a fork or skewer. Slowly pour the milk mixture over the cake, letting it absorb evenly.
- Cover and refrigerate for at least 4 hours (or overnight for best results).
3. Make the Whipped Topping
- In a large bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream evenly over the soaked cake.
4. Serve & Enjoy!
- Garnish with a sprinkle of cinnamon and fresh berries, if desired.
