Description

These Traeger Sweet Chili Shrimp are smoky, spicy, and slightly sweet with a perfect balance of flavors. Grilled on a Traeger pellet smoker, the shrimp soak up that delicious wood-fired taste while being coated in a sticky Thai-style sweet chili sauce. This dish makes an amazing appetizer, taco filling, or main dish over rice.

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Sweet Chili Sauce:

  • 1/2 cup Thai sweet chili sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sriracha (optional, for extra heat)
  • 1 tsp minced garlic
  • 1/2 tsp grated ginger

For Garnish:

 

  • 1 tbsp chopped cilantro
  • 1 tbsp sesame seeds
  • Lime wedges

Instructions

Step 1: Prep the Shrimp

  1. Preheat your Traeger grill to 375°F and use a mild wood pellet like cherry, apple, or hickory.
  2. In a bowl, toss the shrimp with olive oil, soy sauce, garlic powder, smoked paprika, salt, and black pepper.

Step 2: Smoke & Grill the Shrimp

  1. Place shrimp directly on the grill grates or use a grill pan.
  2. Smoke the shrimp for 5-7 minutes, flipping once, until they turn pink and opaque.

Step 3: Make the Sweet Chili Glaze

  1. While the shrimp are grilling, whisk together sweet chili sauce, honey, soy sauce, lime juice, sriracha, garlic, and ginger in a small saucepan over medium heat. Simmer for 2 minutes, then remove from heat.

Step 4: Glaze & Serve

 

  1. Brush the cooked shrimp with the sweet chili sauce, then grill for another 2 minutes to caramelize the glaze.
  2. Remove from the grill, garnish with cilantro, sesame seeds, and lime wedges, and serve immediately.

Notes

  • For extra smoky flavor, let the shrimp sit in the Traeger for 10 minutes before increasing the heat to 375°F.
  • Great for tacos, rice bowls, or skewers.

 

  • Swap out the honey for maple syrup for a different sweetness.
