Description

This Traeger Philly Cheesesteak Casserole combines tender smoked beef, sautéed peppers and onions, and loads of melted cheese in a baked, low-carb casserole. It’s a smoky, comforting twist on the classic Philly cheesesteak, perfect for feeding a crowd!


Ingredients

  • 2 lbs ribeye steak (thinly sliced) or ground beef
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 cup shredded provolone cheese or sliced provolone
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy cream

 

  • 4 large eggs (for binding, optional)

Instructions

Preheat the Traeger Grill

  • Set your Traeger to 350°F and allow it to preheat for about 15 minutes with the lid closed.

2. Cook the Steak & Veggies

  • Heat a large cast-iron skillet or griddle over medium heat.
  • Add olive oil and butter, then sauté the onions and peppers until soft (about 5 minutes).
  • Add garlic and cook for another minute.
  • Move veggies to one side of the skillet, then add the sliced ribeye or ground beef to the other side.
  • Season with salt, pepper, Worcestershire sauce, and smoked paprika.
  • Cook until the beef is browned and cooked through (5-7 minutes).
  • Drain excess grease if necessary, then mix the meat and veggies together.

3. Mix the Casserole Base

  • In a large bowl, whisk together cream cheese, heavy cream, and eggs (if using).
  • Stir in half of the shredded cheese.

4. Assemble the Casserole

  • Transfer the steak and veggie mixture to a greased 9×13-inch baking dish.
  • Pour the cream cheese mixture evenly over the top.
  • Sprinkle with the remaining provolone and mozzarella cheese.

5. Smoke the Casserole

  • Place the dish on the Traeger grill and cook at 350°F for 30-40 minutes, or until the cheese is melted, bubbly, and slightly golden.

6. Serve & Enjoy!

  • Let it cool for 5 minutes, then slice and serve!
  • Pair with toasted hoagie rolls if you want that classic Philly cheesesteak vibe!

  • Eggs are optional but help bind the casserole for a firmer texture.
  • Swap provolone for white American cheese for extra creaminess.
