Description

A delicious, smoky take on traditional bruschetta, grilled on a Traeger pellet grill for extra flavor. Juicy tomatoes, fresh basil, and garlic are piled onto crispy, wood-fired bread for the perfect appetizer or snack.


Ingredients

  • 1 baguette, sliced into 1/2-inch pieces
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

 

  • 1/2 cup shredded Parmesan cheese (optional

Instructions

  • Preheat the Traeger – Set your Traeger grill to 375°F and preheat with the lid closed for about 15 minutes.
  • Prepare the Tomato Topping – In a bowl, mix diced cherry tomatoes, minced garlic, fresh basil, balsamic vinegar, salt, black pepper, and red pepper flakes. Let it sit for 10–15 minutes to allow flavors to blend.
  • Grill the Bread – Brush both sides of the baguette slices with 2 tablespoons of olive oil. Place them directly on the Traeger grill grates and cook for 3–5 minutes per side until golden brown and slightly crispy.
  • Assemble – Remove the toasted bread from the grill and lightly rub each piece with a garlic clove for extra flavor. Spoon the tomato mixture over each slice. Drizzle with remaining olive oil and sprinkle with Parmesan if using.

 

  • Serve & Enjoy – Serve immediately while warm and crispy!

Notes

  • You can add a smoky depth by roasting the tomatoes on the Traeger for 10 minutes before mixing.
  • For extra flavor, use a flavored wood pellet like cherry or hickory.
