Description

This Tomato Garlic Salad is a light and refreshing dish made with ripe tomatoes, fresh garlic, and a zesty olive oil dressing. It’s perfect as a side dish for grilled meats, seafood, or served with crusty bread. Simple, quick, and packed with flavor, this salad is a must-have for summer gatherings or everyday meals!

Ingredients

Scale
  • 4 large ripe tomatoes, diced (or 2 cups cherry tomatoes, halved)
  • 2 cloves garlic, finely minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or lemon juice for a fresher taste)
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for a slight kick)
  • 2 tbsp fresh basil or parsley, chopped
  • 1 tbsp grated Parmesan (optional, for extra flavor)

Instructions

  • Prepare the Tomatoes: Wash and chop the tomatoes into bite-sized pieces. If using cherry tomatoes, simply halve them.
  • Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar (or lemon juice), minced garlic, salt, black pepper, and red pepper flakes.
  • Combine: In a large bowl, add the tomatoes and pour the dressing over them. Toss gently to coat.
  • Add Fresh Herbs: Sprinkle the chopped basil or parsley over the salad and toss again.
  • Let it Marinate: Let the salad sit for 10-15 minutes at room temperature to allow the flavors to meld together.
  • Serve: Optionally, top with grated Parmesan for extra richness and serve with crusty bread or as a side dish.

Notes

  • For a deeper flavor, let the salad marinate in the fridge for 30 minutes before serving.
  • Use heirloom or vine-ripened tomatoes for the best taste.
  • Add sliced red onions or cucumbers for extra crunch.
  • Pairs well with grilled chicken, fish, or steak.
