Ingredients
Scale
- 4 large ripe tomatoes, diced (or 2 cups cherry tomatoes, halved)
- 2 cloves garlic, finely minced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or lemon juice for a fresher taste)
- 1/4 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional, for a slight kick)
- 2 tbsp fresh basil or parsley, chopped
- 1 tbsp grated Parmesan (optional, for extra flavor)
Instructions
- Prepare the Tomatoes: Wash and chop the tomatoes into bite-sized pieces. If using cherry tomatoes, simply halve them.
- Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar (or lemon juice), minced garlic, salt, black pepper, and red pepper flakes.
- Combine: In a large bowl, add the tomatoes and pour the dressing over them. Toss gently to coat.
- Add Fresh Herbs: Sprinkle the chopped basil or parsley over the salad and toss again.
- Let it Marinate: Let the salad sit for 10-15 minutes at room temperature to allow the flavors to meld together.
- Serve: Optionally, top with grated Parmesan for extra richness and serve with crusty bread or as a side dish.
Notes
- For a deeper flavor, let the salad marinate in the fridge for 30 minutes before serving.
- Use heirloom or vine-ripened tomatoes for the best taste.
- Add sliced red onions or cucumbers for extra crunch.
- Pairs well with grilled chicken, fish, or steak.
