Instructions

  1. Toast the bread slices to your preferred level of crispiness.

  2. Mash the avocado lightly with a fork and spread it on one slice of toast. Add a pinch of salt, pepper, and a squeeze of lemon juice, if using.

  3. Layer the tomato slices on top of the avocado.

  4. Add cucumber slices, red onion, and sprouts or arugula.

  5. Spread hummus or vegan mayo on the other slice of toast, if desired.

  6. Press the sandwich together, slice in half, and serve immediately.


Notes

  • You can add cheese, such as mozzarella or feta, for extra flavor.
