- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth (or water)
- 1 tablespoon lime juice (fresh)
- 8 small flour or corn tortillas

Instructions
- Cook the chicken: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing for about 2-3 minutes until softened.
- Season the chicken: Sprinkle the cumin, chili powder, smoked paprika, oregano, salt, and black pepper over the chicken breasts. Stir to coat evenly.
- Add broth: Pour in the chicken broth and bring to a simmer. Cover and cook the chicken on low heat for about 20-25 minutes, or until the chicken is fully cooked and shreds easily with a fork.
- Shred the chicken: Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and toss it in the sauce left in the pan. Stir in the lime juice.
- Prepare the tortillas: Warm the tortillas in a dry skillet or microwave for a few seconds until soft.
- Assemble the tacos: Divide the pulled chicken among the tortillas. Add your desired toppings, such as lettuce, tomatoes, cilantro, salsa, guacamole, sour cream, or cheese.
