  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth (or vegetable broth)
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Sauté: Turn on the Instant Pot and select the “Sauté” function. Heat olive oil and add the chopped onion, bell pepper, and garlic. Sauté for about 3-5 minutes until softened.
  • Brown the Moose Meat: Add the moose meat and cook, breaking it apart, until browned (about 5-7 minutes).
  • Add the Rest of the Ingredients: Stir in the chili powder, cumin, paprika, cayenne (if using), salt, and pepper. Add the tomato paste, diced tomatoes, beans, and broth. Stir to combine.
  • Pressure Cook: Close the lid of the Instant Pot, ensuring the valve is set to “Sealing.” Select the “Manual” or “Pressure Cook” setting and cook on high pressure for 25 minutes.
  • Release Pressure: Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to “Venting” to release any remaining pressure.
  • Serve: Open the lid and give the chili a good stir. Serve hot with your favorite toppings like shredded cheese, sour cream, or green onions.
