Description

These Irish Potato Candies are a sweet and creamy no-bake treat, perfect for St. Patrick’s Day! Despite their name, they don’t contain any potatoes—just a delicious mix of coconut, butter, cream cheese, and cinnamon.


Ingredients

  • 4 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 1/2 cups sweetened shredded coconut
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  • Mix the base – In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  • Add sweetness – Mix in the vanilla extract, then gradually add the powdered sugar, beating until fully combined.
  • Fold in the coconut – Stir in the shredded coconut until the mixture forms a dough-like consistency.
  • Shape into “potatoes” – Scoop out small portions (about 1 teaspoon each) and roll them into oval or round potato-like shapes.
  • Coat in cinnamon – Roll each candy in ground cinnamon until fully coated, giving them their “potato” look.
  • Chill and serve – Place the coated candies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes before serving.

Notes
