- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 2 1/2 cups sweetened shredded coconut
- 1 tablespoon ground cinnamon (for rolling)
Instructions
- Mix the base – In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Add sweetness – Mix in the vanilla extract, then gradually add the powdered sugar, beating until fully combined.
- Fold in the coconut – Stir in the shredded coconut until the mixture forms a dough-like consistency.
- Shape into “potatoes” – Scoop out small portions (about 1 teaspoon each) and roll them into oval or round potato-like shapes.
- Coat in cinnamon – Roll each candy in ground cinnamon until fully coated, giving them their “potato” look.
- Chill and serve – Place the coated candies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes before serving.
Notes
- For extra texture, add chopped pecans or walnuts.
- If the mixture is too sticky, chill for 10 minutes before rolling.
