Units
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups old-fashioned rolled oats
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup chopped pecans (or walnuts)
- 1 cup sweetened shredded coconut
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats. - Cream the Butter and Sugars:
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2–3 minutes. - Add the Wet Ingredients:
Beat in the eggs one at a time, then mix in the vanilla extract until well combined. - Combine the Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. - Add the Mix-Ins:
Stir in the oats, chocolate chips, pecans, and shredded coconut until evenly distributed throughout the dough. - Shape the Cookies:
Scoop the dough into heaping tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheets. - Bake:
Bake for 10–12 minutes, or until the edges are golden brown but the centers are still soft. For chewier cookies, bake closer to 10 minutes; for crispier cookies, bake up to 12 minutes. - Cool:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Mix-It-Up: Feel free to swap out the pecans for walnuts, the chocolate chips for white chocolate or butterscotch chips, or add dried fruit like cranberries or raisins.
- Freezer-Friendly: Scoop the dough into balls and freeze them. You can bake them straight from the freezer—just add an extra minute or two to the baking time.
- Gluten-Free Option: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend.
