For the Beef Filling:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup canned diced tomatoes (drained)
- 1/2 cup shredded cheddar cheese
For the Enchilada Sauce:
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 2 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
- 1 cup tomato sauce
For Assembling:
- 8 small corn tortillas
- 1 1/2 cups shredded Mexican cheese blend
- Fresh cilantro, for garnish

Make the Enchilada Sauce:
- Heat vegetable oil in a saucepan over medium heat.
- Stir in flour and cook for 1 minute until golden.
- Add chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well.
- Gradually whisk in chicken broth and tomato sauce. Simmer for 5-7 minutes until thickened. Remove from heat.

Prepare the Beef Filling:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add onions and garlic, cooking for 2 minutes until softened.
- Stir in chili powder, cumin, paprika, salt, and pepper.
- Mix in diced tomatoes and simmer for 5 minutes. Remove from heat and stir in ½ cup of shredded cheddar cheese.

Assemble the Enchiladas:
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
- Warm tortillas slightly to prevent cracking.
- Spoon beef filling into each tortilla, roll tightly, and place seam-side down in the baking dish.

Bake:
- Pour enchilada sauce evenly over the rolled tortillas.
- Sprinkle with shredded Mexican cheese blend.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly.

- Garnish with fresh cilantro and serve hot.
Notes
- You can substitute ground turkey or chicken for a lighter option.
- For extra heat, add diced jalapeños to the filling.
