Description

  • 1 1/2 cups milk (whole milk for creaminess)

  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp red pepper flakes (optional, for spice)

Optional Toppings:

  • 2 tbsp chopped green onions
  • 2 tbsp crisp bacon crumbles
  • Hot sauce or salsa

Instructions

Step 1: Cook the Tater Tots

  1. Preheat oven to 425°F (220°C) and bake tater tots according to package instructions until crispy.
    (For an air fryer, cook at 400°F for 12-15 minutes, shaking halfway through.)

Step 2: Make the Sausage Gravy

  1. Heat a skillet over medium heat and cook breakfast sausage until browned, breaking it up with a spoon.
  2. Add butter to the pan and melt. Sprinkle in flour and stir for 1 minute to form a roux.
  3. Slowly whisk in milk, stirring constantly until thickened (about 3-5 minutes).
  4. Season with salt, pepper, garlic powder, and red pepper flakes (if using). Reduce heat and keep warm.

Step 3: Cook the Eggs

  1. In another pan, heat 1 tbsp olive oil or butter over medium heat.
  2. Crack in eggs and cook to your preferred style (scrambled, fried, or over easy).

Step 4: Assemble the Breakfast Bowl

  1. Divide crispy tater tots into serving bowls.
  2. Spoon sausage gravy over the tater tots.
  3. Top with eggs and shredded cheese.
  4. Garnish with green onions, bacon, and hot sauce, if desired.
