- 8 oz cream cheese, softened
- 1/4 cup powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- 1/4 cup graham cracker crumbs (for garnish)
- 8 oz semi-sweet or dark chocolate, finely chopped
- 1 tablespoon coconut oil or vegetable shortening (optional, for smoother chocolate)

Instructions
- Prepare the Strawberries:
Wash and thoroughly dry the strawberries (any moisture will prevent the chocolate from sticking).
Use a small paring knife or a strawberry huller to remove the stems and core out the center of each strawberry, creating a small cavity for the filling. - Make the Cheesecake Filling:
In a bowl, beat the softened cream cheese until smooth and creamy.
Add powdered sugar and vanilla extract, mixing until fully combined and fluffy.
Transfer the cheesecake filling to a piping bag (or a zip-top bag with the corner snipped off). - Fill the Strawberries:
Carefully pipe the cheesecake filling into the hollowed-out strawberries, slightly overfilling for a nice, rounded top.
Place the filled strawberries on a parchment-lined baking sheet and refrigerate for about 20 minutes to firm up. - Melt the Chocolate:
In a microwave-safe bowl, combine the chopped chocolate and coconut oil (if using).
Microwave in 30-second intervals, stirring after each, until smooth and fully melted. - Dip the Strawberries:
Hold each filled strawberry by the leafy top or use a skewer, and dip it into the melted chocolate, covering the cheesecake filling and part of the strawberry.
Allow the excess chocolate to drip off, then place the dipped strawberry back on the parchment-lined sheet. - Garnish:
While the chocolate is still wet, sprinkle with graham cracker crumbs, drizzle with melted white chocolate, or add any desired toppings.
Refrigerate until the chocolate is set, about 15–20 minutes. - Serve:
