- 1 1/2 lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into chunks
- 2 tbsp olive oil
- 8–10 wooden or metal skewers
- Marinade & Glaze
- 1/3 cup honey
- 1/4 cup soy sauce
- 2 tbsp sriracha (adjust to taste)
- 1 tbsp lime juice
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
Instructions
- Prepare the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Make the marinade: In a bowl, whisk together honey, soy sauce, sriracha, lime juice, rice vinegar, garlic, ginger, smoked paprika, and black pepper.
- Marinate the chicken: Place chicken cubes in a resealable bag or bowl, and pour half of the marinade over them. Toss to coat and refrigerate for at least 30 minutes (or up to 4 hours for more flavor). Reserve the remaining marinade for basting.
- Assemble the skewers: Thread marinated chicken, pineapple chunks, bell peppers, and red onion onto skewers, alternating for a colorful presentation.
- Preheat the grill: Heat your grill to medium-high (about 400°F). Lightly oil the grates.
- Grill the skewers: Place skewers on the grill and cook for about 10-12 minutes, turning occasionally and basting with the reserved marinade until the chicken is fully cooked (internal temp of 165°F).
- Caramelize & Serve: Let the skewers cook for another 1-2 minutes per side to allow the pineapple to caramelize. Remove from the grill and serve immediately!

- Swap chicken for shrimp or tofu for a different protein option.
- Adjust the spice level by increasing or reducing the sriracha.
