Description

These Sweet and Spicy Grilled Chicken and Pineapple Skewers are bursting with bold flavors! Juicy chicken is marinated in a sticky, sweet, and spicy glaze, then grilled to perfection alongside caramelized pineapple chunks. Perfect for summer cookouts, BBQs, or a quick weeknight meal.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into chunks
  • 2 tbsp olive oil
  • 810 wooden or metal skewers
  • Marinade & Glaze
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp sriracha (adjust to taste)
  • 1 tbsp lime juice
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper

Instructions

  • Prepare the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Make the marinade: In a bowl, whisk together honey, soy sauce, sriracha, lime juice, rice vinegar, garlic, ginger, smoked paprika, and black pepper.
  • Marinate the chicken: Place chicken cubes in a resealable bag or bowl, and pour half of the marinade over them. Toss to coat and refrigerate for at least 30 minutes (or up to 4 hours for more flavor). Reserve the remaining marinade for basting.
  • Assemble the skewers: Thread marinated chicken, pineapple chunks, bell peppers, and red onion onto skewers, alternating for a colorful presentation.
  • Preheat the grill: Heat your grill to medium-high (about 400°F). Lightly oil the grates.
  • Grill the skewers: Place skewers on the grill and cook for about 10-12 minutes, turning occasionally and basting with the reserved marinade until the chicken is fully cooked (internal temp of 165°F).
  • Caramelize & Serve: Let the skewers cook for another 1-2 minutes per side to allow the pineapple to caramelize. Remove from the grill and serve immediately!

Notes

  • Swap chicken for shrimp or tofu for a different protein option.
  • Adjust the spice level by increasing or reducing the sriracha.
  • These skewers pair perfectly with coconut rice or a fresh summer salad.
