Description

This sandwich is stacked high with savory roasted turkey, sun-dried tomatoes, creamy cheese, and fresh greens, all tucked between slices of fluffy, herby focaccia bread. It’s rich, flavorful, and super satisfying!


Ingredients

(for 2 sandwiches)

 

  • 1 focaccia loaf or 2 large squares, sliced in half

  • 6 oz roasted turkey breast, sliced thin (deli-style or leftover turkey)

  • 1/4 cup sun-dried tomatoes in oil, drained and chopped

  • 2 tbsp mayonnaise or garlic aioli

  • 1 tbsp Dijon mustard (optional)

  • 2 slices provolone, mozzarella, or Swiss cheese

  • 1 cup arugula or mixed greens

  • 1/2 avocado, sliced (optional)

  • Salt & pepper, to taste


Instructions

  • Toast the focaccia (optional): Lightly toast focaccia slices in a pan or toaster oven for extra crispiness.

  • Make the spread: Mix mayo (or aioli) with Dijon mustard if using. Spread on both inner sides of the focaccia.

  • Layer it up:

    • Start with the cheese slices

    • Add turkey slices evenly

    • Top with chopped sun-dried tomatoes

    • Add avocado slices, if using

    • Finish with arugula or mixed greens

  • Assemble and press: Top with the second half of the focaccia. Gently press down and slice in half.

 

  • Serve immediately or wrap tightly and chill for a flavorful lunch later!


Notes

  • Add a drizzle of balsamic glaze or pesto for even more flavor.
