Ingredients
(for 2 sandwiches)

1 focaccia loaf or 2 large squares, sliced in half

6 oz roasted turkey breast, sliced thin (deli-style or leftover turkey)

1/4 cup sun-dried tomatoes in oil, drained and chopped

2 tbsp mayonnaise or garlic aioli

1 tbsp Dijon mustard (optional)

2 slices provolone, mozzarella, or Swiss cheese

1 cup arugula or mixed greens

1/2 avocado, sliced (optional)

Salt & pepper, to taste
Instructions

Toast the focaccia (optional): Lightly toast focaccia slices in a pan or toaster oven for extra crispiness.

Make the spread: Mix mayo (or aioli) with Dijon mustard if using. Spread on both inner sides of the focaccia.

Start with the cheese slices
