Description

This Summer Berry Cheesecake Salad is a creamy, refreshing, and fruity dessert packed with fresh strawberries, blueberries, raspberries, and blackberries. A rich and tangy cheesecake-flavored dressing brings everything together, making it the perfect no-bake treat for warm-weather gatherings, picnics, or barbecues!


Ingredients

For the Salad:

  • 1 1/2 cups strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup mini marshmallows (optional, for extra sweetness)

For the Cheesecake Dressing:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (or Cool Whip for a shortcut)

Instructions

  1. Prepare the Cheesecake Dressing:

    • In a mixing bowl, beat the softened cream cheese until smooth.
    • Add powdered sugar and vanilla extract, then continue beating until fully combined.
    • Slowly add the heavy whipping cream and beat until light, fluffy, and smooth. (If using Cool Whip, gently fold it in instead of whipping.)
  2. Assemble the Salad:

    • In a large bowl, combine the strawberries, blueberries, raspberries, and blackberries.
    • Add the mini marshmallows if using.
  3. Mix & Serve:

    • Gently fold the cheesecake dressing into the berries until evenly coated.
    • Serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice or zest.
  • If making ahead, keep the dressing separate and mix just before serving to prevent the berries from releasing too much juice.

 

  • You can substitute Greek yogurt or vanilla yogurt for a lighter dressing.
