Description

Sugar Cookie Cheesecake Bars combine the classic flavors of sugar cookies and creamy cheesecake into a delightful dessert. This recipe features a buttery Golden Oreo crust, a rich cheesecake layer, and a topping of sugar cookie dough, all finished with colorful sprinkles.

For the crust:

  • 24 Golden Oreo cookies
  • 1/4 cup unsalted butter, melted

For the cheesecake layer:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the topping:

  • 1 package (16.5 oz) prepared sugar cookie dough
  • Sprinkles (optional)

Instructions

  • Prepare the crust: Preheat your oven to 350°F (175°C). Grease an 11×7-inch baking pan and set aside. Crush the Golden Oreo cookies into fine crumbs and mix with melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan.

  • Make the cheesecake layer: In a medium bowl, beat the softened cream cheese and granulated sugar until smooth. Add the egg and vanilla extract, mixing until well incorporated. Spread this mixture over the prepared crust.

  • Add the cookie dough topping: Break the sugar cookie dough into small pieces, flatten them slightly, and arrange them over the cheesecake layer, covering as much surface as possible.

  • Bake: Place the pan in the preheated oven and bake for 30-40 minutes, or until the top is set and lightly golden.

  • Cool and serve: Remove from the oven and allow the bars to cool completely in the pan. For best results, refrigerate for 2-3 hours before slicing. Add sprinkles on top before serving, if desired.


Notes

  • For easier removal, line the baking pan with parchment paper, leaving an overhang on the sides.
