Scale
- 1 cup (170g) white chocolate chips or chopped white chocolate
- 1/4 cup (60ml) heavy cream
- 1/2 cup (10g) freeze-dried strawberries, finely ground
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, softened
- 1/4 teaspoon salt
- 1/2 cup (60g) powdered sugar or extra ground freeze-dried strawberries for coating
Instructions
- In a heatproof bowl, add the white chocolate and butter. Set aside.
- In a small saucepan, heat the heavy cream over medium heat until just simmering (do not boil).
- Pour the hot cream over the white chocolate and let it sit for 1–2 minutes to soften.
- Stir gently until smooth. If needed, microwave in 10-second intervals to melt any remaining bits.
- Stir in the vanilla extract, salt, and ground freeze-dried strawberries until fully combined.
- Cover the bowl and refrigerate for 1–2 hours, or until firm enough to scoop.
- Using a small spoon or a cookie scoop, scoop out portions of the mixture and roll them into balls.
- Roll each truffle in powdered sugar or extra ground freeze-dried strawberries for coating.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- If the mixture is too soft to roll, chill it longer or briefly freeze it.
- For extra strawberry flavor, mix powdered sugar with more ground freeze-dried strawberries before coating.
- Keep refrigerated for up to 1 week or freeze for longer storage.
