A fresh and vibrant salad made with juicy strawberries, crisp spinach, crunchy nuts, and a tangy homemade dressing. Perfect for a light lunch or a side dish for any meal!

Ingredients

Units Scale
For the Salad:
  • 6 cups fresh baby spinach
  • 1 1/2 cups fresh strawberries, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled (or goat cheese)
  • 1/2 cup pecans or almonds, toasted
  • 1/4 cup dried cranberries (optional)
For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar (or apple cider vinegar)
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large bowl, combine the spinach, strawberries, red onion, feta cheese, and toasted nuts. Add dried cranberries if using.
  • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Serve immediately and enjoy!

Notes

  • Add grilled chicken for extra protein.
  • Swap feta for blue cheese for a stronger flavor.
  • Use walnuts or sunflower seeds for a nut-free version.
