  • 2 1/2 teaspoons active dry yeast
  • 1 cup warm whole milk (110°F)
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsalted butter, softened

For the Filling:

  • 1 cup strawberry jam

For the Coating:

  • 1 cup granulated sugar
  • 2 tablespoons freeze-dried strawberry powder

Instructions

  • Activate the Yeast:
    • In a small bowl, combine the warm milk and a pinch of sugar. Sprinkle the yeast over the top and let it sit for 15 minutes until it becomes frothy.
  • Prepare the Dough:
    • In the bowl of a stand mixer fitted with a dough hook, mix together the flour, sugar, and salt.
    • Add the activated yeast mixture and eggs to the dry ingredients. Mix on medium speed until a dough forms.
    • Gradually add the softened butter, one tablespoon at a time, mixing continuously.
    • Continue kneading the dough in the mixer until it becomes smooth, glossy, and elastic, pulling away from the sides of the bowl.
  • First Rise:
    • Transfer the dough to a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Shape the Rolls:
    • On a lightly floured surface, roll out the dough into a large rectangle, approximately ¼-inch thick.
    • Evenly spread the strawberry jam over the dough, leaving a small border around the edges.
    • Starting from the long side, tightly roll up the dough into a log.
    • Using a sharp knife, cut the log into 12 equal slices.
  • Second Rise:
    • Place the rolls cut-side up in a greased 9×13-inch baking pan, leaving space between them.
    • Cover the pan with a kitchen towel and let the rolls rise for another 30-45 minutes, or until puffy.
  • Bake:
    • Preheat the oven to 350°F (175°C).
    • Bake the rolls for 25-30 minutes, or until golden brown and cooked through.
  • Prepare the Coating:
    • In a shallow bowl, mix together the granulated sugar and freeze-dried strawberry powder.
  • Coat the Rolls:
    • While the rolls are still warm, brush them lightly with melted butter.
    • Roll each roll in the strawberry sugar mixture until well coated.
