Description

Strawberry Cheesecakeadillas are everything you love about cheesecake—sweet, creamy, fruity—but wrapped in a crispy, golden tortilla! These dessert quesadillas are stuffed with a luscious cream cheese filling, fresh strawberries, and a touch of sweetness, then pan-fried to perfection. Think of it as a handheld cheesecake you can eat warm!


Ingredients

  • 4 flour tortillas (8-inch size)

  • 6 oz cream cheese, softened

  • 2 tablespoons powdered sugar

  • 1/2 teaspoon vanilla extract

  • 1 cup fresh strawberries, sliced

  • 2 tablespoons butter (for frying)

 

  • Optional for topping: cinnamon sugar, whipped cream, chocolate drizzle, or extra strawberries


Instructions

  1. In a small bowl, mix the softened cream cheese with powdered sugar and vanilla until smooth and creamy.

  2. Spread half the cream cheese mixture on one side of each of two tortillas.

  3. Arrange sliced strawberries over the cream cheese layer, then top with the remaining tortillas to form two quesadillas.

  4. Heat 1 tablespoon of butter in a skillet over medium heat. Add one quesadilla and cook for 2–3 minutes per side, until golden brown and crisp.

  5. Repeat with the second quesadilla, adding more butter as needed.

  6. Remove from skillet, let cool slightly, then cut into wedges.

  7. Serve warm with your favorite toppings!


Notes

Want it extra sweet? Sprinkle cinnamon sugar on top right after frying.

 

You can use jam or Nutella instead of or along with the strawberries.

 

Works great with other fruits like blueberries, raspberries, or banana
