Description

These Strawberry Cheesecake Bites are a simple, no-bake treat made with fresh strawberries stuffed with a sweet, creamy cheesecake filling and topped with graham cracker crumbs. They’re perfect for summer, parties, or a quick, healthy-ish dessert!


Ingredients

  • 1 lb (450g) fresh strawberries (about 20-24 large strawberries)
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) heavy whipping cream
  • 1/4 cup (30g) graham cracker crumbs
  • (Optional) Melted chocolate for drizzling

Instructions

Prepare the Strawberries

  1. Wash and dry the strawberries.
  2. Cut off the tops and hollow out the center using a small knife or a melon baller.

2. Make the Cheesecake Filling

  1. In a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fluffy.

3. Fill the Strawberries

  1. Spoon or pipe the cheesecake filling into the hollowed-out strawberries.
  2. Sprinkle graham cracker crumbs on top.

4. Chill & Serve

  1. Refrigerate for at least 30 minutes before serving.
  2. Drizzle with melted chocolate for extra indulgence (optional).

Notes

  • For a healthier version, use Greek yogurt instead of heavy cream.
  • Want a crunch? Add crushed nuts or mini chocolate chips on top.
  • Make ahead! These bites can be stored in the fridge for up to 2 days.
