Ingredients
For the Steak Bites:
1 1/2 lbs sirloin steak (or ribeye), cut into 1-inch cubes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 tablespoon olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
For the Potatoes:
1 1/2 lbs baby potatoes, quartered
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme (or Italian seasoning)
Instructions
- Cook the potatoes: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the quartered potatoes, season with salt, pepper, garlic powder, paprika, and thyme. Cook for 12-15 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.
- Prepare the steak bites: While the potatoes cook, season the steak cubes with salt, pepper, paprika, and garlic powder.
- Sear the steak: In the same skillet, heat 1 tablespoon olive oil over high heat. Add the steak bites in a single layer (work in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your preferred doneness. Remove and set aside.
- Make the garlic butter: Reduce heat to medium, add butter and minced garlic, and cook for 30 seconds until fragrant.
- Combine everything: Return the steak bites and potatoes to the skillet, tossing to coat in the garlic butter. Cook for 1-2 minutes until heated through.
- Serve: Garnish with fresh parsley and enjoy hot!

- Steak doneness: Cook to medium-rare (130-135°F) or medium (140-145°F) for the best texture.
