Description

This Split Pea Soup is thick, creamy, and packed with flavor from tender split peas, carrots, celery, and smoky ham (or a vegetarian option). It’s a warm and satisfying meal that’s perfect for chilly days!

For the Soup:

  • 2 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 lb (2 1/4 cups) dried split peas, rinsed
  • 6 cups vegetable or chicken broth (plus more if needed)
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 cup diced ham (or smoked turkey, optional)
  • 1/2 tsp salt (adjust to taste)

Optional Garnishes:

  • Fresh parsley or thyme
  • Croutons or crispy bacon
  • A drizzle of olive oil

Instructions

Step 1: Sauté the Aromatics

Heat olive oil in a large pot over medium heat.

Add onion, garlic, carrots, and celery, and sauté for 5 minutes until softened.

Step 2: Simmer the Soup

Stir in split peas, broth, thyme, black pepper, and bay leaf.

Bring to a boil, then reduce heat to low and let simmer for 45-60 minutes, stirring occasionally.

Step 3: Add Ham & Adjust Seasoning

If using, stir in diced ham or smoked turkey and let simmer for another 10 minutes.

Remove bay leaf and season with salt to taste.

Step 4: Blend (Optional) & Serve

For a creamier texture, blend half of the soup using an immersion blender.

Serve warm, garnished with fresh herbs, croutons, or crispy bacon.

 


Notes

  • Vegetarian Option: Skip the ham and use vegetable broth.
  • Thicker Soup: Let simmer longer or mash some peas with a spoon.
  • Storage: Refrigerate for up to 4 days or freeze for up to 3 months.
