Description

This Spicy Sausage and Tortellini Soup is a comforting, hearty dish packed with flavorful Italian sausage, tender cheese tortellini, and a creamy, spicy tomato broth. Serve with crusty bread for a cozy, satisfying meal!

  • For the Soup:
  • 1 lb spicy Italian sausage, casing removed
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream (or half & half for a lighter version)
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • 9 oz refrigerated cheese tortellini
  • 2 cups fresh spinach (or kale), chopped
  • Salt & black pepper, to taste
  • 1/2 cup grated Parmesan cheese, for garnish

Instructions

  • Step 1: Cook the Sausage & Aromatics
  • Heat a large pot over medium heat. Add sausage and cook, breaking it up, until browned (5–7 minutes). Drain excess fat if needed.
  • Sauté the aromatics: Add diced onion and cook until softened (2–3 minutes). Stir in garlic and red pepper flakes, cooking for another 30 seconds until fragrant.
  • Step 2: Simmer the Soup
  • Pour in diced tomatoes, chicken broth, Italian seasoning, and smoked paprika (if using). Bring to a simmer and cook for 5 minutes to develop flavors.
  • Stir in heavy cream and season with salt & black pepper to taste.
  • Step 3: Add the Tortellini & Spinach
  • Add tortellini and cook for 5–7 minutes, or until tender.
  • Stir in spinach and cook for 1–2 more minutes, until wilted.
  • Step 4: Serve & Enjoy
  • Ladle the soup into bowls and top with grated Parmesan cheese. Serve hot with crusty bread or garlic bread for dipping!

Notes

  • Want it extra spicy? Add more red pepper flakes or a splash of hot sauce.
  • Milder version: Use sweet Italian sausage instead of spicy.
  • Make it extra creamy: Add 4 oz of softened cream cheese for a rich, silky texture.
  • Storage: Keeps in the fridge for 3 days (the tortellini may absorb liquid, so add more broth when reheating).
