- For the Soup:
- 1 lb spicy Italian sausage, casing removed
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp red pepper flakes (adjust to taste)
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream (or half & half for a lighter version)
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika (optional, for a smoky flavor)
- 9 oz refrigerated cheese tortellini
- 2 cups fresh spinach (or kale), chopped
- Salt & black pepper, to taste
- 1/2 cup grated Parmesan cheese, for garnish
Instructions
- Step 1: Cook the Sausage & Aromatics
- Heat a large pot over medium heat. Add sausage and cook, breaking it up, until browned (5–7 minutes). Drain excess fat if needed.
- Sauté the aromatics: Add diced onion and cook until softened (2–3 minutes). Stir in garlic and red pepper flakes, cooking for another 30 seconds until fragrant.
- Step 2: Simmer the Soup
- Pour in diced tomatoes, chicken broth, Italian seasoning, and smoked paprika (if using). Bring to a simmer and cook for 5 minutes to develop flavors.
- Stir in heavy cream and season with salt & black pepper to taste.
- Step 3: Add the Tortellini & Spinach
- Add tortellini and cook for 5–7 minutes, or until tender.
- Stir in spinach and cook for 1–2 more minutes, until wilted.
- Step 4: Serve & Enjoy
- Ladle the soup into bowls and top with grated Parmesan cheese. Serve hot with crusty bread or garlic bread for dipping!
Notes
- Want it extra spicy? Add more red pepper flakes or a splash of hot sauce.
- Milder version: Use sweet Italian sausage instead of spicy.
