- For the Dough:
- 3 1/4 cups bread flour
- 1 1/4 cups warm water (110°F)
- 2 1/4 tsp (1 packet) instant yeast
- 1 tsp sugar
- 1 1/2 tsp salt
- 2 tbsp olive oil
- For the Spicy Pizza Sauce:
- 1 (15 oz) can crushed tomatoes
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp red pepper flakes (adjust to taste)
- 1 tsp oregano
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- For the Toppings:
- 12 oz Wisconsin brick cheese (or mozzarella + Monterey Jack), cubed
- 20 slices spicy pepperoni (or hot soppressata)
- 1 small jalapeño, sliced (optional)
- 1 tbsp hot honey (for drizzle, optional)
- 1 tsp crushed red pepper flakes (for extra heat)
Instructions
- Step 1: Make the Dough
- In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Stir in flour, salt, and olive oil until combined. Knead for 5 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise for 2 hours, or until doubled in size.
- Step 2: Prep the Pan & Dough
- Grease a 9×13-inch baking pan with olive oil.
- Stretch the dough to fit the pan (if it resists, let it rest for 10 minutes and try again). Let it rise in the pan for 30 minutes.
- Step 3: Make the Spicy Pizza Sauce
- Heat olive oil in a saucepan over medium heat. Add garlic and sauté for 30 seconds.
- Stir in crushed tomatoes, red pepper flakes, oregano, smoked paprika, and salt. Simmer for 10 minutes.
- Step 4: Assemble the Pizza
- Preheat oven to 500°F (260°C).
- Layer the cheese: Spread cubed cheese all the way to the edges (this creates the crispy caramelized crust).
- Add pepperoni and sliced jalapeños.
- Spoon sauce in thick lines across the top (Detroit-style pizzas have sauce on top, not under the cheese).
- Step 5: Bake & Serve
- Bake for 12–15 minutes, until the cheese is bubbly and edges are crispy.
- Let cool for 5 minutes, then drizzle with hot honey and sprinkle with extra red pepper flakes. Slice & enjoy!
Notes
- No brick cheese? Use a mix of mozzarella and Monterey Jack for a similar melt.
- Crispier edges? Make sure the cheese is touching the pan to caramelize.
- Want it extra spicy? Add crushed Calabrian chilies to the sauce.
