Description

These Southern Salmon Croquettes are crispy on the outside, tender on the inside, and full of classic Southern flavor. Made with canned salmon, breadcrumbs, and a few simple spices, they come together quickly for an easy weeknight meal or a comforting appetizer.


Ingredients

  • 1 (14.75 oz) can pink salmon (drained & bones removed)
  • 1/2 cup breadcrumbs (or crushed saltine crackers)
  • 1 small onion (finely chopped)
  • 1/2 small bell pepper (finely chopped, optional)
  • 1 large egg
  • 1/4 cup mayonnaise (or sour cream)
  • 1 teaspoon mustard (yellow or Dijon)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for spice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley (or green onions)
  • 1/2 cup cornmeal (for coating, optional)
  • 1/4 cup vegetable oil (for frying)

Instructions

1. Mix the Salmon Croquette Batter:

  1. In a bowl, flake the drained salmon with a fork.
  2. Add breadcrumbs, onion, bell pepper, egg, mayonnaise, mustard, Worcestershire sauce, and seasonings.
  3. Mix until well combined and form into 8 small patties (about 2 inches wide).

2. Coat & Prep for Frying:

  1. If using, lightly coat each patty with cornmeal for extra crunch.
  2. Place patties on a plate and let them chill in the fridge for 10 minutes (helps them hold together).

3. Pan-Fry the Croquettes:

  1. Heat vegetable oil in a skillet over medium heat.
  2. Fry croquettes for 3-4 minutes per side, until golden brown and crispy.
  3. Drain on a paper towel-lined plate.

4. Serve & Enjoy!

  • Serve warm with remoulade sauce, tartar sauce, or hot sauce.

Notes

  • Want them baked? Bake at 400°F (200°C) for 15-18 minutes, flipping halfway through.
  • Gluten-free? Use almond flour or gluten-free breadcrumbs.
  • Make it spicy! Add chopped jalapeños or extra cayenne.
  • Leftovers? Store in the fridge for 3 days or freeze for up to 2 months.
