Description

These Smothered Green Chili Burritos are packed with tender shredded beef or chicken, refried beans, and topped with a savory green chili sauce and melted cheese.     • 1 lb shredded beef (or chicken for variation)
    • 1 can (15 oz) refried beans
    • 6 large flour tortillas
    • 2 cups shredded Mexican blend cheese
    • 1 small onion, finely diced
    • 1 tablespoon olive oil
    • Salt and pepper, to taste
  • For the Green Chili Sauce:

    • 2 cans (4 oz each) diced green chiles
    • 2 cups chicken broth
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 1 teaspoon garlic powder
    • 1 teaspoon cumin
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon chili powder
    • Salt and pepper, to taste
  • For Topping:

    • 1/2 cup sour cream (optional)
    • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Prepare the Filling:

    • In a large skillet, heat the olive oil over medium heat. Add diced onions and sauté until softened, about 3-4 minutes.
    • Add the shredded beef (or chicken) to the skillet and heat through. Season with salt and pepper. Remove from heat and set aside.
  2. Make the Green Chili Sauce:

    • In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until golden and bubbly.
    • Slowly whisk in the chicken broth, stirring constantly to avoid lumps.
    • Add the diced green chiles, garlic powder, cumin, onion powder, and chili powder. Simmer the sauce for about 5-7 minutes until it thickens. Season with salt and pepper to taste.
  3. Assemble the Burritos:

    • Preheat your oven to 350°F (175°C).
    • Lay out a tortilla and spread about 2-3 tablespoons of refried beans down the center.
    • Add a generous portion of shredded beef (or chicken), then sprinkle some cheese on top.
    • Roll the tortilla tightly, folding in the sides, and place it seam-side down in a greased 9×13 baking dish. Repeat with the remaining tortillas.
  4. Smother and Bake:

    • Pour the green chili sauce evenly over the burritos in the baking dish.
    • Sprinkle the remaining shredded cheese on top.
    • Bake for 20 minutes, or until the cheese is melted and bubbly.
  5. Serve:

    • Garnish with sour cream and fresh cilantro if desired. Serve hot!

Notes

  • You can use ground beef or even a vegetarian filling like sautéed veggies as an alternative to shredded beef or chicken.
  • If you prefer a spicier sauce, add a diced jalapeño to the sauce or increase the chili powder.
