These S’mores Rice Krispie Treats are a fun twist on the classic treat, packed with marshmallows, crushed graham crackers, and melty chocolate. They’re easy to make, require no baking, and taste just like a campfire s’more—without the fire! Perfect for parties, potlucks, or a quick homemade dessert.

- 6 cups Rice Krispies cereal
- 1 1/2 cups graham cracker pieces (about 6 whole crackers, broken into chunks)
- 5 cups mini marshmallows, divided
- 4 tbsp unsalted butter
- 1/2 tsp vanilla extract
- 1 cup semisweet or milk chocolate chips (or chopped chocolate bars)
- 1/2 cup additional mini marshmallows for topping (optional)
Instructions
- Prepare the pan: Line a 9×13-inch baking dish with parchment paper and lightly grease it.
- Melt butter & marshmallows: In a large pot over medium-low heat, melt the butter. Once melted, add 4 cups of mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in vanilla extract.
- Mix the dry ingredients: In a large bowl, combine Rice Krispies cereal and graham cracker pieces.
- Combine everything: Pour the melted marshmallow mixture over the cereal and graham crackers. Gently stir until everything is well coated.
- Add chocolate & extra marshmallows: Let the mixture cool slightly (about 2 minutes), then fold in the chocolate chips and remaining 1 cup of mini marshmallows. The chocolate will melt slightly, creating a gooey texture.
- Press into pan: Transfer the mixture into the prepared pan. Use a greased spatula (or your hands) to gently press it down evenly.
- Top it off (optional): Sprinkle extra chocolate chips and mini marshmallows on top for extra flavor.
- Set & slice: Let the treats cool for about 30 minutes, then cut into squares and enjoy!
Notes
- Want extra gooey treats? Don’t press too firmly when placing them in the pan; a light touch keeps them softer.
- Prefer a crunchier bite? Use less marshmallow mixture.
- Storage: Store in an airtight container at room temperature for up to 3 days. Avoid refrigerating, as it can make them hard.
- Want a campfire flavor? Lightly toast the marshmallows under the broiler for 30 seconds before serving.
