This Slow Cooker Greek Chicken is an easy, flavorful meal made with tender chicken thighs, fresh lemon juice, garlic, and a blend of Mediterranean herbs. Let your slow cooker do the work for a dish that’s perfect for busy weeknights or meal prep. Serve it with rice, roasted veggies, or inside a pita with tzatziki.
Ingredients

2 lbs boneless, skinless chicken thighs

1/4 cup olive oil

Juice of 1 lemon

Zest of 1 lemon

4 cloves garlic, minced

1 tbsp red wine vinegar

2 tsp dried oregano

1 tsp dried thyme
-
1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1 small red onion, thinly sliced

1/2 cup chicken broth

Optional: chopped fresh parsley and crumbled feta for serving
Instructions

In a small bowl, whisk together olive oil, lemon juice and zest, garlic, red wine vinegar, oregano, thyme, salt, pepper, and paprika.

Place chicken thighs in the slow cooker and top with sliced red onion.

Pour the marinade over the chicken, making sure it’s well coated.

Add chicken broth around the sides (not over the top).

Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and fully cooked.

Optional: Shred the chicken slightly or leave whole.

Serve with chopped parsley and crumbled feta if desired.
Notes

For extra flavor, marinate the chicken in the mixture overnight before cooking.

Delicious served over rice, couscous, or tucked into pita bread with fresh veggies and tzatziki.

Can also use chicken breasts, but thighs stay more tender in the slow cooker.
