Description

This Slow Cooker Greek Chicken is an easy, flavorful meal made with tender chicken thighs, fresh lemon juice, garlic, and a blend of Mediterranean herbs. Let your slow cooker do the work for a dish that’s perfect for busy weeknights or meal prep. Serve it with rice, roasted veggies, or inside a pita with tzatziki.


Ingredients

  • 2 lbs boneless, skinless chicken thighs

  • 1/4 cup olive oil

  • Juice of 1 lemon

  • Zest of 1 lemon

  • 4 cloves garlic, minced

  • 1 tbsp red wine vinegar

  • 2 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika

  • 1 small red onion, thinly sliced

  • 1/2 cup chicken broth

 

  • Optional: chopped fresh parsley and crumbled feta for serving


Instructions

  • In a small bowl, whisk together olive oil, lemon juice and zest, garlic, red wine vinegar, oregano, thyme, salt, pepper, and paprika.

  • Place chicken thighs in the slow cooker and top with sliced red onion.

  • Pour the marinade over the chicken, making sure it’s well coated.

  • Add chicken broth around the sides (not over the top).

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and fully cooked.

  • Optional: Shred the chicken slightly or leave whole.

 

  • Serve with chopped parsley and crumbled feta if desired.


Notes

  • For extra flavor, marinate the chicken in the mixture overnight before cooking.

  • Delicious served over rice, couscous, or tucked into pita bread with fresh veggies and tzatziki.

 

  • Can also use chicken breasts, but thighs stay more tender in the slow cooker.
