Ingredients

Units Scale

For the Beef & Potatoes:

  • 2 lbs beef stew meat (or sirloin cut into bite-sized pieces)
  • 1 1/2 lbs baby potatoes, halved (or Yukon gold potatoes cut into chunks)
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for spice)

For Garnish (Optional):

  • Fresh chopped parsley
  • Grated Parmesan cheese

Instructions

  • Sear the Beef (Optional for Extra Flavor):
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the beef bites for 1-2 minutes per side, until browned. (This step is optional but adds extra flavor!)
  • Add to Slow Cooker:
    • Place the beef bites and potatoes in the slow cooker.
    • Add diced onion, minced garlic, Worcestershire sauce, oregano, thyme, paprika, salt, and pepper.
    • Pour in the beef broth and melted butter, stirring to coat everything evenly.
  • Slow Cook:
    • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are soft.
  • Final Touches:
    • Taste and adjust seasoning if needed.
    • Garnish with fresh parsley and a sprinkle of Parmesan cheese (optional).
  • Serve & Enjoy:
    • Serve warm with a side of crusty bread or a fresh green salad!

Notes

  • For Extra Flavor: Add ½ teaspoon of onion powder or a splash of soy sauce.
  • Make it Creamier: Stir in ½ cup of heavy cream at the end.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
  • Best Beef Cuts: Stew meat, sirloin, or chuck roast cut into chunks work best.
