Description

Tender beef bites and baby potatoes slow-cooked in a garlic butter sauce with herbs and seasonings. A simple yet hearty dish that’s perfect for busy days!


Ingredients

  • 2 lbs beef stew meat (or chuck roast, cut into 1-inch pieces)
  • 1 1/2 lbs baby potatoes, halved (Yukon Gold or red potatoes)
  • 4 tbsp butter, melted
  • 5 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Sear the beef (optional, but recommended): In a skillet over medium-high heat, sear beef bites for 2-3 minutes on each side until browned. Transfer to the slow cooker.
  2. Layer the potatoes: Add the halved baby potatoes on top of the beef.
  3. Prepare the garlic butter sauce: In a small bowl, mix melted butter, minced garlic, beef broth, Worcestershire sauce, salt, pepper, paprika, onion powder, thyme, rosemary, and red pepper flakes. Pour over the beef and potatoes.
  4. Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until beef is tender and potatoes are cooked through.
  5. Serve: Sprinkle fresh parsley and Parmesan (if using) over the dish. Serve warm and enjoy!

Notes

  • Use chuck roast for the most tender beef.
  • Swap potatoes for carrots for a different variation.
  • Add a splash of heavy cream for a richer sauce.
