Tender beef bites and baby potatoes slow-cooked in a garlic butter sauce with herbs and seasonings. A simple yet hearty dish that’s perfect for busy days!

- 2 lbs beef stew meat (or chuck roast, cut into 1-inch pieces)
- 1 1/2 lbs baby potatoes, halved (Yukon Gold or red potatoes)
- 4 tbsp butter, melted
- 5 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp red pepper flakes (optional, for heat)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Sear the beef (optional, but recommended): In a skillet over medium-high heat, sear beef bites for 2-3 minutes on each side until browned. Transfer to the slow cooker.
- Layer the potatoes: Add the halved baby potatoes on top of the beef.
- Prepare the garlic butter sauce: In a small bowl, mix melted butter, minced garlic, beef broth, Worcestershire sauce, salt, pepper, paprika, onion powder, thyme, rosemary, and red pepper flakes. Pour over the beef and potatoes.
- Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until beef is tender and potatoes are cooked through.
- Serve: Sprinkle fresh parsley and Parmesan (if using) over the dish. Serve warm and enjoy!
Notes
- Use chuck roast for the most tender beef.
- Swap potatoes for carrots for a different variation.
- Add a splash of heavy cream for a richer sauce.
