Ingredients

Units Scale

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/2 teaspoon onion powder

3 cloves garlic (minced)

1 can (14.5 oz) crushed tomatoes

1 can (8 oz) tomato sauce

1 cup heavy cream (or half-and-half for a lighter option)

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional, for heat)

1/2 cup fresh basil (chopped) or 1 teaspoon dried basil

2 tablespoons olive oil

1 teaspoon balsamic vinegar (optional, for depth of flavor)

For Serving (Optional):

Cooked pasta, rice, or mashed potatoes

Extra Parmesan cheese

Fresh basil for garnish

Instructions

  1. Prepare the Chicken:

    • Season the chicken breasts with salt, pepper, Italian seasoning, and onion powder.
  2. Assemble in Slow Cooker:

    • Place the chicken in the slow cooker.
    • Add garlic, crushed tomatoes, tomato sauce, and red pepper flakes (if using).
    • Drizzle with olive oil and balsamic vinegar.
  3. Slow Cook:

    • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender.
  4. Make It Creamy:

    • Stir in heavy cream, Parmesan cheese, and fresh basil.
    • Let it cook for another 10-15 minutes on low until the sauce is creamy and well blended.
  5. Serve & Enjoy:

    • Serve over pasta, rice, or mashed potatoes.
    • Garnish with extra Parmesan and fresh basil.

Notes

  • Use chicken thighs for a juicier option.
  • Swap heavy cream for coconut milk for a dairy-free version.
  • Stir in spinach or sun-dried tomatoes for extra flavor.
  • If the sauce is too thin, mix 1 teaspoon cornstarch with 1 tablespoon water and stir it in during the last 15 minutes.
