- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, diced (Yukon Gold or Russet)
- 1 (15 oz) can diced tomatoes (with juice)
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (optional, for creaminess)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/4 cup green onions, sliced (for garnish)
Instructions
- Brown the beef – In a skillet over medium heat, cook ground beef with diced onion until browned. Drain any excess fat. Stir in minced garlic and cook for another minute.
- Layer the ingredients – In a slow cooker, layer half of the diced potatoes, half of the beef mixture, half of the beans, half of the corn, and half of the diced tomatoes. Repeat with the remaining ingredients.
- Season and add broth – Sprinkle smoked paprika, chili powder, oregano, cumin, salt, and black pepper over the layers. Pour beef broth over the top.
- Cook – Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until potatoes are tender.
- Add cheese – Sprinkle shredded cheddar cheese on top, cover, and cook for another 10-15 minutes until melted.
- Serve – Stir in sour cream if using, garnish with green onions, and serve warm!

- Swap ground beef for turkey or sausage for a different flavor.
- Add bell peppers for extra color and sweetness.
- For a spicier kick, add diced jalapeños or hot sauce.
- Works well with pinto beans or black beans instead of kidney beans.
