Ingredients

4 boneless, skinless chicken breasts (or thighs)

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1 small onion, finely chopped

1/4 cup chicken broth

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/2 cup fresh basil leaves, torn

Grated Parmesan cheese, for serving (optional)
Instructions

Place the chicken in the bottom of your slow cooker.

Add cherry tomatoes, garlic, onion, chicken broth, olive oil, salt, pepper, and red pepper flakes on top.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.

Just before serving, stir in the fresh basil.

Serve hot with a spoonful of the tomato mixture over each piece of chicken. Top with Parmesan if desired.

You can use boneless chicken thighs for extra flavor and tenderness.
