Ingredients

Units Scale
  • 4 cups potatoes, peeled and diced (Russet or Yukon Gold)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups smoked sausage or andouille, sliced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup (optional, for extra creaminess)
  • 1 1/2 tsp Cajun seasoning (adjust to taste)
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup heavy cream (or half-and-half)
  • 1 1/2 cups shredded cheddar cheese
  • 2 tbsp cornstarch mixed with 2 tbsp water (for thickening, if needed)
  • 2 tbsp unsalted butter
  • 2 tbsp chopped green onions or fresh parsley (for garnish)

Instructions

  • Prep Ingredients: Add diced potatoes, onion, garlic, sausage, chicken broth, cream of chicken soup (if using), Cajun seasoning, paprika, salt, pepper, and thyme to a slow cooker. Stir to combine.
  • Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are tender.
  • Make It Creamy: Stir in heavy cream, shredded cheese, and butter. If the soup needs thickening, add the cornstarch slurry and stir. Cook for another 10-15 minutes until thick and creamy.
  • Serve & Garnish: Ladle into bowls and top with green onions or fresh parsley. Enjoy!

Notes

  • Make It Spicier: Add a pinch of cayenne pepper or hot sauce for extra heat.
  • Meat Options: Swap sausage for shredded chicken or crispy bacon.
  • Lighter Version: Use half-and-half instead of heavy cream and reduce cheese by half.
  • Gluten-Free Option: Omit the cream of chicken soup or use a gluten-free alternative.
