Description

Here’s a delicious and easy Slow Cooker Blueberry Cobbler recipe that you can make with minimal effort but maximum flavor. It’s the perfect dessert to serve warm with a scoop of ice cream or whipped cream! Recipe: Slow Cooker Blueberry Cobbler

Ingredients

Units Scale
  • :
  • For the Fruit Filling:
  • 4 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar (adjust based on berry sweetness)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • For the Topping:
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cubed and chilled
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  • :
  • Prepare the Fruit Filling:
  • In a bowl, toss the blueberries with sugar, cornstarch, lemon juice, and cinnamon (if using).
  • Transfer the berry mixture to the bottom of a slow cooker, spreading it evenly.
  • Make the Topping:
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in the milk, sugar, and vanilla extract until combined. The batter should be thick but spreadable.
  • Assemble the Cobbler:
  • Drop spoonfuls of the batter evenly over the blueberries in the slow cooker. Don’t worry if the topping doesn’t completely cover the fruit – it will spread as it cooks.
  • Cook the Cobbler:
  • Cover and cook on high for about 2 to 2 1/2 hours, or until the fruit is bubbly and the topping is golden brown and set in the center. If cooking on low, it may take around 3 to 4 hours.
  • Serve:
  • Let the cobbler cool for a few minutes before serving. Top with vanilla ice cream, whipped cream, or a dollop of yogurt for extra indulgence.

Notes

  • :
  • Feel free to swap out blueberries for other berries like raspberries, blackberries, or strawberries if you prefer.
  • For a sweeter cobbler, add a little more sugar to the fruit filling.
  • You can add a pinch of nutmeg to the topping for extra flavor.
