Ingredients
-
2 lbs pork tenderloin
-
1 1/2 cups BBQ sauce (your favorite kind)
-
1 medium onion, sliced
-
1 tbsp apple cider vinegar
-
1 tsp garlic powder
Instructions
-
Place the sliced onions in the bottom of your slow cooker.
-
Lay the pork tenderloin on top of the onions.
-
Sprinkle garlic powder over the pork and pour in the apple cider vinegar.
-
Pour the BBQ sauce over everything, making sure the pork is mostly covered.
-
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the pork is tender and shreds easily.
-
Remove the pork, shred it with two forks, and return it to the sauce in the slow cooker. Stir to combine.
-
Let it sit on “warm” for 15–20 minutes to soak up the flavor before serving.
Notes
-
You can use pork loin or pork shoulder if you prefer, just adjust the cook time as needed.
-
For extra flavor, sear the pork in a hot skillet before adding it to the slow cooker.
-
Serve on buns, in tacos, or over mashed potatoes.
-
Add a splash of water or broth if your BBQ sauce is too thick.
