  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for smoky flavor)

  • 4 eggs
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or pepper jack)

Instructions

Step 1: Cook the Potatoes

  1. Heat butter or oil in a large cast-iron skillet over medium heat.
  2. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and crispy.

Step 2: Add Veggies & Seasonings

  1. Stir in onion, bell pepper, salt, black pepper, paprika, and garlic powder.
  2. Cook for another 5 minutes, until veggies are tender.

Step 3: Cook the Eggs

  1. Make 4 small wells in the skillet and crack an egg into each well.
  2. Cover and cook for 3-5 minutes, until eggs reach your preferred doneness.

Step 4: Add Cheese & Serve

  1. Sprinkle cheese over the skillet and let it melt.
  2. Top with bacon, green onions, sour cream, or avocado.
  3. Serve immediately with hot sauce or salsa.
