- 4 (6 oz) halibut fillets
- 2 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano (or thyme)
- 1 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
Prep the Halibut:
- Pat the halibut fillets dry with paper towels.
- In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, salt, pepper, paprika, and oregano.
- Brush the marinade evenly over both sides of the halibut. Let it sit for 10–15 minutes while you preheat the grill.
2. Grill the Halibut:
- Preheat your grill to medium-high heat (400°F–450°F).
- Lightly oil the grill grates to prevent sticking.
- Place the halibut on the grill and cook for 3–4 minutes per side, or until the fish is opaque and flakes easily with a fork.
3. Serve & Enjoy:
- Remove the halibut from the grill and let it rest for 2 minutes.
- Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
- If your fillets have skin, grill skin-side down first for extra crispiness.
- Use a fish spatula to gently flip the halibut and avoid breaking it.
