Description

This grilled halibut is light, flaky, and full of fresh citrus and herb flavors. It’s a quick and healthy meal that’s perfect for summer grilling! With just a few simple ingredients, this recipe brings out the natural, mild sweetness of halibut while keeping it moist and tender.


Ingredients

  • 4 (6 oz) halibut fillets
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano (or thyme)
  • 1 tbsp fresh parsley, chopped (for garnish)

 

  • Lemon wedges (for serving)

Instructions

Prep the Halibut:

  1. Pat the halibut fillets dry with paper towels.
  2. In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, salt, pepper, paprika, and oregano.
  3. Brush the marinade evenly over both sides of the halibut. Let it sit for 10–15 minutes while you preheat the grill.

2. Grill the Halibut:

  1. Preheat your grill to medium-high heat (400°F–450°F).
  2. Lightly oil the grill grates to prevent sticking.
  3. Place the halibut on the grill and cook for 3–4 minutes per side, or until the fish is opaque and flakes easily with a fork.

3. Serve & Enjoy:

  1. Remove the halibut from the grill and let it rest for 2 minutes.
  2. Garnish with fresh parsley and serve with lemon wedges on the side.

Notes

  • If your fillets have skin, grill skin-side down first for extra crispiness.
  • Use a fish spatula to gently flip the halibut and avoid breaking it.
