Description

This Simple Carrot Salad is light, crunchy, and refreshing. Made with just a handful of ingredients, it’s a quick and easy side dish that pairs perfectly with almost any main course. Tossed with a lemony dressing and a touch of sweetness, it’s a healthy and flavorful addition to your table.


Ingredients

  • 4 cups grated carrots (about 4-5 medium carrots)

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon honey (or maple syrup)

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon toasted sunflower seeds (optional, for crunch)


Instructions

  1. In a large bowl, combine grated carrots and chopped parsley.

  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.

  3. Pour the dressing over the carrots and toss until everything is well coated.

  4. Sprinkle sunflower seeds on top, if using.
